Main Ingredients- 150g Chicken tenderloin
- 1/2 Carrot
- 1 Small onion
- 1 Potato
- 1/2 Apple
- 300ml Water
Seasoning- 90g Curry powder or curry roux block

Cooking Instructions
Step 1
Begin by preparing all your ingredients. Dice the carrot, onion, and potato into bite-sized cubes, approximately 1.5 cm. For the potatoes, soak them in cold water for about 5 minutes after cutting to remove excess starch; this helps prevent the rice from clumping. Cut the chicken tenderloin into similar bite-sized pieces.
Step 2
Heat a pot or deep pan over medium heat and add a little cooking oil. Add the chicken tenderloin and sauté until it’s lightly browned. This step helps to render some fat and build flavor. Next, add the diced potatoes, onions, and carrots to the pot. Stir-fry them with the chicken for 2-3 minutes until the vegetables start to soften and become slightly translucent. Pour in the 300ml of water. Bring the mixture to a boil over high heat, then reduce the heat to medium-low, cover the pot, and simmer for about 10-15 minutes, or until the vegetables are tender.
Step 3
Check if the vegetables are fully cooked by piercing them with a fork. Once tender, lower the heat to very low or turn it off temporarily. Add the 90g of curry powder or curry roux block to the pot. Stir continuously until the curry is completely dissolved and there are no lumps. Once the curry is smooth, turn the heat back on to low and stir gently as it simmers and thickens to your desired consistency. Finally, add the peeled and chopped apple pieces. Cook for another 1-2 minutes, just until the apple softens slightly and melds into the curry. Your delicious apple curry rice is now ready to be served over warm rice!
