Main Ingredients- Boiled Petasites 500g (stem with skin peeled and boiled)
Seasoning Ingredients- Perilla seed powder 4-5 Tbsp
- Anchovy-kelp broth or water 500ml
- Minced garlic 1 tsp
- Sunflower oil 2 Tbsp
- Perilla oil 1 tsp

Cooking Instructions
Step 1
Thoroughly peel the outer skin of the Petasites stems, then blanch them briefly in boiling water. Be careful not to overcook, as they can become mushy. Rinse the blanched Petasites in cold water, drain excess moisture, and store them submerged in water in your kimchi refrigerator. This method keeps them fresh for about a week to 10 days without spoiling. When ready to cook, simply drain, rinse, and prepare.
Step 2
Cut the prepared Petasites into bite-sized pieces, about 4-5 cm in length.
Step 3
Heat 2 Tbsp of sunflower oil in a pan over medium heat. Add 1 tsp of minced garlic and stir-fry for about 10 seconds until fragrant. Be mindful not to burn the garlic.
Step 4
Add the 500g of prepared Petasites to the pan with the garlic and stir-fry for about 1 minute. Then, pour in 500ml of anchovy-kelp broth or water.
Step 5
Bring the liquid to a boil and simmer for 5-7 minutes, allowing the flavors to meld with the Petasites. Next, add 4-5 Tbsp of perilla seed powder and stir well to dissolve any clumps. It’s best to have a slightly saucy consistency for easier eating later.
Step 6
After incorporating the perilla seed powder, continue to simmer for another 2-3 minutes until the sauce thickens slightly. Finally, stir in 1 tsp of perilla oil, give it a quick mix, and turn off the heat. Your delicious Perilla Seed Stir-fried Petasites is ready!
