  • 6 cups of refreshing broth (anchovy-kelp broth or clean water)
  • The key to spiciness! 1/2 to 1 Cheongyang pepper (adjust to your taste)
  • 1/4 red chili pepper for color
  • Flavor enhancer! 1 chicken bouillon cube (optional)
  • A little sliced green onion for a fragrant finish

  • 1 Tbsp minced garlic
  • Explosion of savory flavor! 2 tsp fish sauce (can be substituted with soy sauce or salted seafood sauce)
  • A pinch of black pepper for a clean finish

In a large pot, combine the rinsed bean sprouts and 6 cups of broth (or water). Add the chicken bouillon cube for extra umami. Cover the pot tightly and bring to a boil. Covering the pot is crucial to remove any unwanted fishy smell from the bean sprouts while enhancing their refreshing flavor.

Finely mince the Cheongyang pepper, which provides the spicy kick, and the red chili pepper for a splash of color. Wash them thoroughly, remove the seeds, and slice them thinly. Feel free to add more Cheongyang peppers if you enjoy a spicier soup.

Once the bean sprouts in the pot start boiling, let them cook for another 1-2 minutes. Be careful not to overcook them, as they can lose their crisp texture.
