Seasoning Ingredients

  • 1 tsp minced garlic
  • 2 Tbsp chili powder (gochugaru)
  • 1 Tbsp soy sauce
  • 1 Tbsp fish sauce (e.g., Kkanari or anchovy)
  • 1 Tbsp plum extract
  • 1 Tbsp sugar
  • 2 Tbsp vinegar
  • 1 Tbsp toasted sesame seeds (for garnish)

Thoroughly wash 100g of fresh chives under running water to remove any dirt or debris. Pat them dry gently. Cut the chives into approximately 4-5 cm lengths. This size is easy to handle and eat.

In a small bowl, combine all the seasoning ingredients: 1 tsp minced garlic, 2 Tbsp chili powder, 1 Tbsp soy sauce, 1 Tbsp fish sauce, 1 Tbsp plum extract, 1 Tbsp sugar, and 2 Tbsp vinegar. Whisk everything together with a spoon until well combined to create a delicious dressing.

Place the cut chives into a larger mixing bowl. Pour the prepared seasoning mixture over the chives. Gently toss the chives with your hands to coat them evenly without bruising.
