Main Ingredients- 2 sheets of square fish cake
- A little spring onion or green onion (finely chopped)
- 1 egg

First, prepare the fish cakes. Cut the 2 sheets of square fish cake into bite-sized pieces (about 3-4 cm squares or rectangles) that are easy for children to eat. Cutting them too small might cause them to break apart, so aim for a moderate size.

Crack 1 egg into a bowl. Add all the finely chopped green onions. Whisk the egg thoroughly with a fork or whisk until the yolk and white are well combined. You can add a pinch of salt for seasoning, but since the fish cakes are already seasoned, it’s okay to omit it.

Dip the prepared fish cake pieces into the egg mixture, ensuring they are coated evenly on both sides. The egg coating should be thin and adhere well to the fish cake. If the egg mixture seems too thin, you can lightly dust the fish cakes with a bit of flour before dipping.

Heat a pan with a generous amount of cooking oil over medium-low heat. Carefully place the egg-coated fish cakes into the pan, one by one, leaving some space between them to prevent sticking. Cooking slowly over medium-low heat ensures they cook through without burning.

Gently fry the fish cakes until both sides are golden brown and slightly crispy. Once one side is sufficiently cooked and firm, flip it over and cook the other side until golden as well. Avoid overcooking to maintain a delightful chewy texture.
