Tart Dough Ingredients

  • 200g glutinous rice flour
  • 1 tsp baking powder
  • 1 Tbsp sugar
  • 1 Tbsp vegetable oil
  • 50ml milk

Apple Filling Ingredients

  • 1 apple
  • 1 Tbsp brown sugar
  • 30g butter
  • 1 tsp ground cinnamon

Crumble Topping Ingredients

  • 40g butter, cubed. 20g sugar
  • 30g regular rice flour
  • 50g almond flour
  • A little vegetable oil

Cooking Instructions

Step 1

Peel the apple, remove the core, and cut it into bite-sized, thin slices.

Step 1

Step 2

Melt 30g of butter in a pan over medium heat. Add the sliced apples, brown sugar, and cinnamon. Stir well to combine.

Step 2

Step 3

Cook the apples until they become translucent and slightly softened, creating a jammy filling. Be careful not to overcook them into mush.

Step 3

Step 4

To make the crumble topping: In a mixing bowl, add the cubed butter and sugar. Using your fingertips, rub the butter and sugar together until it resembles coarse crumbs. This creates a lovely texture.

Step 4

Step 5

Add the regular rice flour and almond flour to the bowl. Mix them in by cutting the mixture with a spatula or your fingers.

Step 5

Step 6

Gently combine until the ingredients are well incorporated and resemble coarse breadcrumbs. Avoid overmixing, as this can make the crumble tough.

Step 6

Step 7

Now, let’s prepare the chewy glutinous rice dough. In a mixing bowl, combine the glutinous rice flour and baking powder. Sift this mixture once to ensure it’s light and airy.

Step 7

Step 8

Gradually add the milk to the sifted flour mixture, mixing with a spatula or your hands. Add the milk in 2-3 additions, adjusting the consistency as needed. Mix until a cohesive dough forms and there are no dry spots.

Step 8

Step 9

Divide the dough into 6 equal portions, suitable for 5 mini tart molds and 1 disposable tart container. Roll each portion into a ball.

Step 9

Step 10

On a lightly floured surface, use a rolling pin or your hands to flatten each dough ball into a thin disc, about 0.5 cm thick, that fits the size of your tart molds. Ensure it covers the bottom and sides evenly.

Step 10

Step 11

Lightly grease the inside of the tart molds with a little vegetable oil. This prevents sticking and ensures easy removal. Press the flattened dough into the molds, shaping it to fit snugly. Trim any excess dough from the edges. Use a fork to prick the bottom of the dough several times; this helps prevent puffing during baking.

Step 11

Step 12

Spoon the prepared apple filling evenly over the shaped tart dough. Leave a small border around the edge to prevent the filling from spilling out.

Step 12

Step 13

Generously sprinkle the crumble topping over the apple filling. A good amount of crumble adds wonderful texture and flavor!

Step 13

Step 14

Bake in a preheated oven at 180°C (350°F) for 20-25 minutes, or until the tops are golden brown. Baking time may vary depending on your oven.

Step 14

Step 15

Once baked, remove from the oven and let cool slightly. Your delicious apple glutinous rice tarts, with their crispy exterior and chewy interior, are now ready to be enjoyed!
