How to Make Clear Dried Pollack Soup

This refreshing and clear dried pollack soup is perfect for soothing a hangover and providing a hearty start to your day. Its simple yet profound savory flavor makes it an easy-to-follow recipe for everyone.
Main Ingredients- 50g Dried Pollack (shredded into bite-sized pieces)
- 1/2 block Firm Tofu (diced)
- 1 large Egg (lightly beaten)
- 1/2 stalk Green Onion (chopped)
- 2 Korean Chili Peppers (chopped, adjust for spice preference)
Seasoning & Broth- Salt (to taste)
- 1 Tbsp Sesame Oil
- 1 Tbsp Minced Garlic
- 3-4 cups Water (approx. 600-800ml)
- 1 Tbsp Rice Wine (optional, to remove fishiness)
- 1 tsp Ginger Juice (optional, for added flavor)

Cooking Instructions
Step 1
First, cut the dried pollack into manageable pieces, about 3-4 cm long. Pieces that are too long can make the soup look messy.

Step 2
Quickly rinse the cut dried pollack under running cold water and then squeeze out excess moisture. This step helps remove any unwanted fishy smell and softens the texture.

Step 3
Heat 1 tablespoon of sesame oil in a pot over medium-low heat. Add the prepared dried pollack and stir-fry for 2-3 minutes until fragrant. Stir-frying allows the pollack to absorb the oil and develop a richer, nutty flavor.

Once the pollack is lightly browned, pour in 3-4 cups of water. For an even deeper flavor, you can use anchovy-kelp broth instead of plain water.
