Delicious Homemade Curry Rice
Nourishing & Hearty Curry Rice: The Perfect Meal for One or Many!

Whip up a delightful curry rice that both kids and adults will love! It’s a wonderfully satisfying meal, perfect for a solo dining experience or a hearty family dinner. It’s packed with nutrition and flavor, making it a fantastic choice. I recently made a generous batch when my son brought his friends over, and they devoured it in no time! Whether it’s a special occasion or just a weeknight, impress everyone with this flavorful curry rice.
Main Ingredients- 190g Block Curry Roux (choose your preferred spiciness)
- 200g Pork Tenderloin (cut for curry)
- 3 Potatoes (medium-sized)
- 2 Onions (medium-sized)
- 1 Zucchini (medium-sized)
- 1 Carrot (medium-sized)
- 2/3 can Sweet Corn (drained)
- Butter (to taste)
Cooking Instructions
Step 1
Wash and prepare all vegetables. Peel the potatoes, onions, zucchini, and carrot, then dice them into bite-sized cubes. Drain the canned sweet corn thoroughly and set aside.

Step 2
Cut the pork tenderloin into curry-sized pieces. Melt a knob of butter in a heated pan and sauté the pork until it’s browned on the outside. Add the diced potatoes and sauté them with the pork to enhance the flavor. Next, add the remaining vegetables (onions, zucchini, carrots) and sauté for about 2 minutes, allowing their natural sweetness to develop.

Step 3
Transfer the sautéed ingredients to a pot or deep pan. Add enough water to just cover the vegetables. Stir in the drained sweet corn and bring to a boil over high heat. Once boiling, reduce the heat to medium-low.

Step 4
As the curry simmers, skim off any foam that rises to the surface; this will result in a clearer and more delicious broth. Check if the potatoes are tender by piercing them with a fork. Once the potatoes are fully cooked, reduce the heat to low and add the block curry roux. Stir gently until the roux has completely dissolved. You can adjust the consistency by adding more water if needed, so don’t add too much liquid initially. Simmer for another 2 minutes until the curry thickens to your desired consistency. Your delicious curry rice is ready!
