Stir-Fried Eggplant
Super Simple & Speedy Stir-Fried Eggplant: The Golden Recipe

Let’s make a delicious stir-fried side dish using seasonal eggplants.
Main Ingredients- 1 medium eggplant
- 1/4 onion
- 1 handful of carrots (about 1/4 carrot)
- A little green onion (white parts mainly)

Step 1
Today, we’re making a super easy and quick side dish for your lunchbox: the ‘Super Simple & Speedy Stir-Fried Eggplant’ golden recipe. Make delicious stir-fried eggplant conveniently at home!

Step 2
First, wash the eggplant thoroughly and cut it into your desired shape. To prevent it from falling apart too easily when cooked, it’s best to slice it about 0.5-1 cm thick. Slice the onion thinly or chop it roughly, and julienne the carrots to a similar size. Finely chop the green onion to add fragrance at the end.

Step 3
Heat a pan over medium-high heat and add a generous amount of cooking oil. Add the prepared eggplant and onion, and stir-fry until the eggplant becomes translucent and slightly softened. (Tip: Eggplant absorbs oil well, so feel free to add a little more oil if needed.)

Step 4
Once the vegetables are partially cooked, add all the seasoning ingredients. Mix in 2 Tbsp soy sauce, 1 Tbsp oyster sauce, 1 Tbsp oligosaccharide, 1 tsp minced garlic, and 1 tsp gochugaru. Add the prepared carrots as well. Quickly stir and mix everything together until the seasonings are evenly distributed.

Step 5
Finally, add the chopped green onion and sesame seeds, and stir-fry briefly one more time. Your delicious stir-fried eggplant is ready! Turn off the heat and let it sit for a moment to allow the flavors to meld. It’s great served immediately or cooled and packed for lunch.
