Spicy & Sweet Stir-fried Jukkumi Udon
Fall in Love with Spring’s Jukkumi Stir-fried Udon

If you know someone complaining about a lack of appetite this spring, treat them to this delicious Jukkumi Udon stir-fry! It’s a vibrant dish that perfectly captures the season.
Main Ingredients- 800g cleaned baby octopus (jukkumi)
- 2 servings of udon noodles
- 1/2 medium onion
- 3 large cabbage leaves
- 1 stalk of green onion
Seasoning Mix- 1 Tbsp minced garlic
- 1 Tbsp gochujang (Korean chili paste)
- 3 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp soy sauce
- Pinch of ginger powder (or 1/2 tsp minced ginger)
- Pinch of black pepper
- 2 Tbsp mirin (rice wine)
- 2 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 1 Tbsp corn syrup (or oligodang)
- 1 Tbsp minced garlic
- 1 Tbsp gochujang (Korean chili paste)
- 3 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp soy sauce
- Pinch of ginger powder (or 1/2 tsp minced ginger)
- Pinch of black pepper
- 2 Tbsp mirin (rice wine)
- 2 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 1 Tbsp corn syrup (or oligodang)
Cooking Instructions
Step 1
Begin by preparing your vegetables. Cut the cabbage into large, bite-sized pieces. Slice the onion into thick strips. Chop the green onion diagonally into large pieces for a pleasant texture.

Step 2
Clean the baby octopus thoroughly. If you purchased uncleaned octopus, place it in a bowl with a handful of flour and coarse sea salt. Rub vigorously with your hands, repeating this process 2-3 times. This method effectively removes any impurities and helps eliminate any fishy odor. Since I’m using frozen octopus, I thawed it first. Then, I blanched it briefly in boiling water with a pinch of coarse sea salt. Be careful not to overcook, as it can become tough.

Step 3
Heat some cooking oil in a pan over medium heat. Add the prepared cabbage and onion and stir-fry until they become slightly translucent. Once the vegetables have softened a bit, add all of the prepared seasoning mix. Stir well and let it cook until the sauce caramelizes slightly and becomes fragrant.

Step 4
Now, add the blanched baby octopus and the chopped green onions to the pan. Increase the heat to high and stir-fry quickly to coat all the ingredients evenly with the sauce. Once everything is well combined, add the udon noodles and continue to stir-fry together.

Step 5
Just before turning off the heat, drizzle in the sesame oil and sprinkle with toasted sesame seeds. This final touch adds a wonderful nutty aroma and flavor.
