Muffin Batter Ingredients- 170g whole wheat flour
- 20g almond flour
- 30g cocoa powder
- 1/2 tsp baking powder
- 1 large egg
- 120g softened butter
- 100g brown sugar
- 1 container (85g) plain yogurt
- 20g milk
- 50g chocolate chips
Cooking Instructions
Step 1
Begin by creaming the softened butter and brown sugar together in a bowl until light and fluffy. Then, whisk the egg until well combined, and gradually add it to the butter mixture in 2-3 additions, mixing well after each addition to prevent the batter from separating. Ensure you mix thoroughly after each egg addition.
Step 2
Incorporate the plain yogurt into the creamed butter mixture and stir until smooth. Next, add the sifted dry ingredients: whole wheat flour, cocoa powder, almond flour, and baking powder. Gently fold these into the wet ingredients using a spatula, using a cutting motion, until just combined. Be careful not to overmix, as this can result in tough muffins.
Step 3
Add the milk to the batter and mix gently. Fold in the chocolate chips, ensuring they are evenly distributed throughout the batter. If the batter seems too thick, you can adjust the amount of milk slightly. Transfer the finished batter into a piping bag for easy filling.
Step 4
Line a muffin tin with paper liners. Fill each liner with the batter, about 80% full, leaving room for the muffins to rise. Generously sprinkle streusel topping over the batter, then arrange the chunk chocolate pieces on top.
