Cooking Instructions

Step 1

Let’s make delicious japchae, a dish perfect for holidays, birthdays, or any special occasion, using a simple stir-fry method! I’ll share the secret to keeping it from getting soggy.

Step 1

Step 2

Since we’re stir-frying the japchae instead of boiling it, first soak the glass noodles in cold water for at least 30 minutes until they are fully hydrated. This step is crucial for achieving a chewy texture and preventing sogginess.

Step 2

Step 3

Heat a generous amount of cooking oil in a pan. First, stir-fry the beef until it’s almost cooked. Then, add the sliced onion, carrot, and shiitake mushrooms, and stir-fry together until the vegetables are about half-cooked.

Step 3

Step 4

In a separate pan, add plenty of cooking oil. Add the soaked glass noodles. Pour in the soy sauce, sugar, a pinch of black pepper, and a pinch of toasted sesame seeds. Stir-fry the noodles, ensuring they are coated with the seasoning and don’t stick to the pan. It’s important to stir-fry until the noodles become translucent and chewy.

Step 4

Step 5

Add the pre-stir-fried vegetables and fish cakes to the stir-fried noodles. Toss everything together until well combined. Finally, add the chives and stir-fry briefly; this will help preserve their vibrant color and a pleasant crunch. Taste the japchae and add a little more soy sauce if needed to adjust the seasoning.

Step 5

Step 6

Finish with a drizzle of sesame oil for a beautiful sheen. Stir-frying with oil creates a coating that prevents the japchae from getting soggy, even when cold, and makes it easy to reheat. Plus, stir-frying all the vegetables together significantly reduces the cooking time, making it a truly convenient and delicious dish! Enjoy your perfectly textured and flavorful japchae!
