Here’s a fantastic shrimp fried rice recipe that’s a lifesaver when you need a quick and satisfying meal! It’s simple enough for beginners and those living alone, packed with the delicious flavors of vegetables and shrimp. Using day-old, cold rice yields the best texture for fried rice.
Main Ingredients- Cocktail shrimp, 10+ pieces (adjust to your liking)
- Onion, 1/4
- Bell pepper, 1/2 (using multiple colors makes it visually appealing)
- Green onion, 1 stalk (more makes it tastier!)
- Cooked rice, 2 bowls (preferably cold/day-old)
Seasoning (using tablespoon as measurement)- Soy sauce, 4 Tbsp
- Salt, 1/2 tsp
- Black pepper, 1/2 tsp
- Mirin (cooking wine), 1 Tbsp

Cooking Instructions
Step 1
First, prepare your vegetables. Dice the onion and bell pepper into roughly 1cm cubes. Using colorful bell peppers will make your fried rice look more appetizing.
Step 2
Thinly slice the green onion. Generous amounts of green onion will enhance the flavor of your fried rice through the infused green onion oil.
Step 3
Heat a wide pan over medium-low heat. Add 2 tablespoons of cooking oil, then add the sliced green onions. Sauté them until fragrant, releasing their aromatic oil. Once the green onion aroma starts to waft, add the cocktail shrimp and stir-fry them together.
Step 4
If you are sensitive to the fishy smell of shrimp, add 1 tablespoon of mirin (cooking wine) directly to the shrimp at this stage. This helps to neutralize any unwanted odors and enhances the shrimp’s natural flavor.
Step 5
Once the shrimp start to turn pink, indicating they are partially cooked, add the diced onion and bell pepper. Stir-fry until the vegetables begin to soften and turn slightly translucent. Then, add the 2 bowls of cold cooked rice. Use a spatula to break up the rice clumps and stir-fry until everything is well combined.
Step 6
Now it’s time to season the fried rice. Push the rice mixture to one side of the pan, creating an empty space. Pour 4 tablespoons of soy sauce into the empty space. Let it sizzle and slightly caramelize for a moment; this creates a ‘wok hei’ or smoky flavor that deepens the taste of the fried rice. Once the soy sauce is fragrant, add 1/2 teaspoon of salt and 1/2 teaspoon of black pepper. Stir-fry quickly to ensure all ingredients are evenly coated and seasoned.
