  • 1 Ladle Kimchi Brine (approx. 150ml)
  • 1 Tbsp Dasida (MSG-based seasoning, optional)
  • 500ml Water (for braising)
  • 3 Tbsp Gochugaru (Korean chili flakes)
  • Pinch of Black Pepper
  • 1 Tbsp Sugar
  • 1 stalk Green Onion

Cooking Instructions

First, it’s important to remove the blood from the pork ribs. Soak the ribs in cold water for about 30 minutes to 1 hour to drain the blood. Then, place the drained ribs in boiling water and blanch for about 1 minute. Adding 1-2 tablespoons of soju or cooking wine at this stage helps eliminate any gamey odors, making the ribs even more tender and removing impurities.

After parboiling, remove the ribs from the hot water and rinse them thoroughly under cold running water. This step ensures any remaining blood or bone fragments are washed away, resulting in a cleaner flavor profile.

Now, let’s prepare the seasoning and marinate the ribs. In a bowl, combine the blanched ribs with 2 tablespoons of minced garlic, 3 tablespoons of gochugaru, 3 tablespoons of soup soy sauce, 1 tablespoon of sugar, 1 tablespoon of perilla oil, a pinch of black pepper, and 1 ladle of kimchi brine. Gently mix and massage the seasoning into the ribs, ensuring each piece is well-coated. Thorough marination is key for flavor.

The sourness of the kimchi beautifully cuts through any richness of the ribs.

Finally, pour in 500ml of water for braising and add the chopped green onion. Bring the mixture to a boil over high heat, then reduce the heat to medium-low.
