  • 200g Potatoes (peeled weight)
  • 1 slice Cheese (e.g., cheddar or mozzarella)
  • 20g Rice Flour (or all-purpose flour/cornstarch)

Peel the potatoes and rinse them thoroughly. Place the peeled potatoes in a pot, add enough water to cover them, and bring to a boil over medium heat. Cook for about 20-30 minutes, or until the potatoes are completely tender. You can easily check for doneness by piercing them with a fork – it should go in smoothly.

Drain the cooked potatoes well. While they are still warm, transfer them to a mixing bowl. Tear the slice of cheese into small pieces and add it to the bowl, along with the 20g of rice flour. Use a fork or a potato masher to thoroughly mash the ingredients together until you have a smooth mixture with no lumps. The cheese will melt and help bind the dough.

Take about a tablespoon of the mashed potato mixture and roll it between your palms to form a smooth ball. Aim for a diameter of about 3cm – small enough for little hands to hold and perfect for a bite-sized treat.

Line a baking sheet with parchment paper and place the shaped potato cheese balls on it, leaving some space between each one. Bake in a preheated oven at 170°C (340°F) for about 10 minutes.
