Easy Spam & Cheese Gimbap Sandwich

This recipe was born out of the desire to create a gimbap-style dish that’s as easy and quick to make as a sandwich, eliminating the usual fuss. The delightful combination of cheese and spam, paired with seasoned rice flavored with soy sauce and fresh lettuce with mayonnaise, creates a universally appealing taste. Main Ingredients

  • 4 sheets of Gim (seaweed)
  • 100g Lettuce
  • 340g Spam
  • 2-3 Eggs
  • 4 slices of Cheese
  • 400g Cooked Rice (warm)
  • 70g Canned Tuna (drained)
  • 20g Carrot
  • 25g Spinach

Rice Seasoning

  • 1 Tbsp Soy Sauce
  • 2 tsp Sesame Oil
  • 2 tsp Toasted Sesame Seeds

For Stir-frying Vegetables

  • Pinch of Salt

Egg Omelet

  • Pinch of Salt
  • 1 Tbsp Milk
  • A little Cooking Oil
  • A little Mayonnaise (for mixing with rice)

Cooking Instructions

Step 1

First, prepare the vegetables for your gimbap. Thinly julienne the carrot and wash the spinach thoroughly. For the lettuce, remove the outer leaves and use the inner leaves for a sandwich-like texture. Chop the vegetables you’ll be stir-frying into similar sizes.

Cut one can (340g) of Spam into 8 equal pieces and pan-fry them over medium heat until golden brown on both sides. This should take about 3 minutes per side. After frying, gently blot the Spam with paper towels to absorb excess oil. Keep the fried Spam covered to maintain its moisture.

Make the egg omelet. Whisk the eggs in a bowl with 1 tablespoon of milk and a pinch of salt. Lightly grease a non-stick pan over medium-low heat, pour in the egg mixture, and cover with a lid. Cook until set, then flip and cook the other side. Once cooled, cut the omelet into four equal pieces using scissors.

Now, prepare the stir-fried vegetables. Since lettuce will be used as a filling, trim the outer leaves and set aside the usable parts. In a pan over high heat, quickly stir-fry the julienned carrot, spinach, and some of the prepared lettuce with a pinch of salt. Stir-frying briefly will keep the vegetables crisp.

Season the rice. In a bowl, combine 400g of warm cooked rice (about 3 large bowls) with 1 tablespoon of soy sauce, 2 teaspoons of sesame oil, and 2 teaspoons of toasted sesame seeds. Mix well. Add the stir-fried vegetables to the seasoned rice and mix again. It’s best to mix while the rice is still warm. Divide the seasoned rice into four equal portions for easier assembly.

It’s time to assemble the gimbap sandwiches! Place a sheet of Gim horizontally. Cut a slit about a quarter of the way up from the center to divide it into two sections. On one section, spread a thin layer of seasoned rice, followed by Spam and a slice of cheese. On the other section, spread a little mayonnaise, then layer with lettuce, followed by the egg omelet, and finally top with more lettuce. Follow the order shown in the photo for neat rolling.

Once rolled, wrap the gimbap sandwich tightly in plastic wrap. Cutting it while still wrapped will help maintain its shape and prevent the fillings from spilling out. Keeping it wrapped also makes it convenient for packing in a lunchbox or for on-the-go snacking without getting your hands messy.
