Instead of the usual black beans I give my baby, I tried making rice with mouse-eye beans (yak kong), and found their texture was so subtle, making them perfect for little ones! I wondered if I could make baby food while cooking our own rice, so I finely chopped vegetables and added them to the rice. To my surprise, the vegetables retained their texture, the colors were beautiful, and it tasted great! Perhaps this baby food was born out of my own convenience! It’s incredibly simple yet packed with nutrition. After setting aside enough for the baby’s meal, the rest becomes a delicious meal for Mom and Dad. As a tip, this rice is excellent for making quick and easy Inari sushi. While it looks simple, it’s a nutritional powerhouse: mouse-eye beans add protein to rice, which is mainly carbohydrates; glutinous millet is rich in calcium, magnesium, and dietary fiber; carrots are full of vitamin A; and zucchini provides plenty of vitamins and minerals. With easily accessible ingredients and a simple cooking method, you can prepare a nutritious meal every day!

Main Ingredients

  • 3 cups rice
  • 1/3 carrot
  • 1/3 zucchini
  • 10g mouse-eye beans (yak kong)
  • 3 Tbsp glutinous millet

Seasoning

  • A little baby soy sauce
  • A little sesame oil

Cooking Instructions

Step 1

First, soak the mouse-eye beans in water overnight. This allows them to swell to two to three times their size and become very soft, making them ideal for babies.

Finely mince the carrot and zucchini that you will add to the rice. Mincing the vegetables finely will help them blend well with the rice and be easier for your baby to chew.

Wash the rice thoroughly, then add the glutinous millet and rinse them together. Rinsing the glutinous millet with the rice will make the final dish chewier and more delicious.

Place the minced vegetables and the soaked mouse-eye beans on top of the washed rice and cook the rice. The aroma of the cooking rice will be wonderful! You’ll be excited to taste it.

If using a pressure cooker, once the rice starts boiling, reduce the heat to low and cook for an additional 6-7 minutes before turning off the heat. For a regular rice cooker, use the standard cooking mode. The resulting rice will have a lovely aroma and beautiful color, and the ingredients will maintain a soft texture without becoming mushy.

Once the rice is cooked, scoop out the portion for your baby. Gently mix it with a little baby soy sauce and sesame oil to create a delicious baby food. The remaining rice can be enjoyed by the adults, or as a handy tip, it’s perfect for making quick and delightful Inari sushi!
