Waffle Batter Ingredients- 200g cake flour (or low-gluten flour)

- 80g granulated sugar

Cooking Instructions
Step 1
In a large bowl, crack the 2 eggs. Add the 80g of granulated sugar and 1g of salt. Whisk them together until the sugar is dissolved and the mixture is smooth. Pour in the 150g of milk and mix well. Sift the 200g of cake flour and 1 tsp of baking powder into the bowl. Gently fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix, as this can make the waffles tough.
Step 2
Add the 50g of melted unsalted butter (ensure it’s cooled slightly) to the batter. Mix until everything is evenly incorporated and you have a smooth waffle batter. The consistency should be like thick pancake batter. Letting the batter rest for a bit at this stage can result in even softer waffles.
Step 3
Preheat your waffle maker thoroughly. Lightly grease the waffle iron grids with a little extra butter to prevent sticking. Pour a suitable amount of batter onto the hot waffle maker, close the lid, and cook until golden brown and cooked through. Cooking time will vary depending on your waffle maker, so check periodically. Once cooked, carefully remove the waffle and let it cool slightly.

In a separate, clean bowl, combine the 250g of cold heavy cream and 25g of granulated sugar. Continue whipping until stiff peaks form – the cream should hold its shape when the whisk is lifted. Be careful not to overwhip, as it can curdle.
Step 5
Whip the cream until it forms firm, glossy peaks that stand straight up. This means the cream is perfectly whipped and will hold its shape beautifully when decorating your waffles, creating an attractive dessert.
Step 6
Place one of the warm, freshly baked waffles onto a serving plate. Generously spread a layer of the whipped cream over the waffle, filling the grid indentations.
