Main Ingredients

  • 300g Pork shoulder, thinly sliced
  • 1/2 Onion
  • A small piece of Carrot (approx. 30g)
  • 1/2 Green Onion (Scallion)
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Cooking Oil

Seasoning (using tablespoon as a standard)

  • 4 Tbsp Soy Sauce
  • 1.5 Tbsp Sugar
  • 1 Tbsp Corn Syrup (or Oligosaccharide)
  • 1.5 Tbsp Gochujang (Korean chili paste)
  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Mirin (or cooking wine)
  • 1 Tbsp Sesame Oil
  • Pinch of Black Pepper
  • Pinch of Sesame Seeds

Cooking Instructions

Step 1

First, prepare your vegetables. Slice the onion and carrot into thin strips (about 0.5cm thick). Cut the green onion diagonally into 5cm pieces. (If you like it spicier, thinly slice 1-2 Korean chili peppers to add!). Measure out the minced garlic. In a bowl, combine soy sauce, sugar, corn syrup, gochujang, gochugaru, mirin, sesame oil, and black pepper. Mix well to create the delicious sauce.

Step 1

Step 2

Heat a frying pan over medium-low heat, add 1 tablespoon of cooking oil, and sauté the diagonally sliced green onion. Cook until fragrant, allowing the oil to absorb the onion’s aroma. This step helps remove any porky smell and enhances the overall flavor.

Step 2

Step 3

Once the green onion is fragrant, turn the heat up to high. Add the prepared 300g of thinly sliced pork shoulder and stir-fry quickly. Use chopsticks or a spatula to separate the meat pieces as they cook, preventing them from clumping together.

Step 3

Step 4

As the pork starts to change color, sprinkle 1 teaspoon of sugar evenly over the meat. (Adjust sugar to your taste). The sugar will melt, adding a beautiful glaze and savory depth to the pork. Continue stir-frying over high heat.

Step 4

Step 5

Add the sliced onion and carrot to the pan. Sprinkle with a pinch of black pepper and stir-fry together. Keep the heat high to cook the vegetables quickly until they soften slightly, but don’t overcook them, as they can become mushy. Ensure everything is well combined with the pork.

Step 5

Step 6

Pour all of the pre-mixed sauce into the frying pan. It’s important to coat the pork and vegetables evenly with the sauce.

Step 6

Step 7

Maintain high heat and stir-fry continuously, ensuring the sauce doesn’t burn. Cook until the sauce thickens and clings beautifully to the pork and vegetables, creating a rich, savory flavor.

Step 7

Step 8

If using, add the sliced Korean chili peppers now and stir-fry briefly to infuse their spice. Finally, sprinkle with sesame seeds for a nutty aroma. Your Jeyuk Bokkeum is almost ready!

Step 8

Step 9

Transfer the delicious Jeyuk Bokkeum to a serving plate. Pile it high – the appetizing aroma is sure to get your taste buds going!

Step 9

Step 10

Your flavorful and spicy-sweet Jeyuk Bokkeum is complete! Enjoy it with warm rice. It’s also wonderful served with fresh lettuce wraps!
