  • 2/3 medium carrot (approx. 70g)
  • 1/2 medium onion (approx. 70g)

Seasoning

  • 1.5 Tbsp low-sodium soy sauce
  • 0.5 Tbsp seasoned soy sauce (or regular soy sauce)
  • 1 Tbsp plum extract (or honey/sugar)
  • A pinch of toasted sesame seeds (optional)

Cooking Instructions

First, prepare the fresh carrots and onions. Wash the carrots thoroughly to remove any dirt, and peel the outer skin of the onion. Rinse them lightly under running water. Then, thinly julienne both the carrots and onions to about 0.3cm thickness. Slicing them to a consistent thickness will ensure they cook evenly and taste better.

Now, let’s stir-fry. Heat 1-2 tablespoons of cooking oil in a wok or skillet over high heat. Add the julienned carrots first and stir-fry quickly for about 1 minute. Stir-frying the carrots first brings out their natural sweetness and improves their texture. Once the carrots are slightly cooked, push them to one side of the pan or add another tablespoon of oil. Then, add the julienned onions and stir-fry them together. Continue to cook for about 2-3 minutes until the onions become translucent and tender. Be careful not to overcook them until they become mushy.

Once all the ingredients are cooked to your liking, turn off the heat. It’s important to turn off the heat before adding the seasonings to prevent burning. Now, pour in the prepared low-sodium soy sauce (1.5 Tbsp), seasoned soy sauce (0.5 Tbsp), and plum extract (1 Tbsp) for sweetness. Use a spatula or chopsticks to mix the vegetables and seasonings thoroughly until well combined. Finally, sprinkle with a pinch of toasted sesame seeds, if desired, for an extra nutty aroma. Serve the finished stir-fried onions and carrots warm over rice or as a side dish.
