Delicate and Fragrant Green Tea Muffins

Baking at home always feels special, doesn’t it? Muffins, in particular, are wonderfully approachable for beginner bakers. I decided to use some leftover green tea powder to create these subtly flavored, moist muffins. They’re not overly sweet, making them a delightful treat for adults too. On a chilly day, they pair beautifully with a warm cup of coffee or tea.
Muffin Batter Ingredients- 120g cake flour (sifted)
- 3g baking powder (sifted)
- 12g green tea powder (sifted)
- 100g granulated sugar
- 80g unsalted butter, softened to room temperature
- 30g milk
- 2 large eggs, at room temperature
- 1 pinch of salt
Muffin Filling (Optional)- 60g cream cheese, softened to room temperature
- 10g powdered sugar
- A small amount of chopped almonds (optional, for texture)
- A small amount of chocolate jam (optional, for extra flavor)

Cooking Instructions
Step 1
Begin by measuring out all the ingredients for the recipe. It’s helpful to have butter, eggs, and cream cheese at room temperature so they incorporate smoothly into the batter.

Place 100g of granulated sugar into a mixing bowl.

Crack in 2 large eggs and add a pinch of salt. The salt enhances the sweetness and brings out the overall flavor profile.

Add 80g of unsalted butter that has been melted and measured.
Step 5
Using a hand mixer or a whisk, thoroughly combine the ingredients in the bowl. Mix until the sugar is mostly dissolved and the mixture is smooth. You don’t need to over-whip it at this stage.
Step 6
Measure out 120g of cake flour.

Sift the cake flour into the bowl. Sifting helps to break up any lumps and aerates the flour, contributing to a lighter, fluffier muffin texture.

Sift in 3g of baking powder as well.
Step 9
Add 12g of green tea powder, which provides that lovely, subtle green tea aroma. It’s best to sift the green tea powder as it can easily clump.

Finally, pour in 30g of milk.

Gently fold the ingredients together with a spatula until just combined and no dry streaks of flour remain. Be careful not to overmix, as this can lead to tough muffins. Once the batter is roughly mixed, preheat your oven to 180°C (350°F).
Step 12
Prepare the filling for the muffin centers. Today, we’re using cream cheese and chocolate jam. Place 60g of cream cheese, softened to room temperature, into a small bowl.
Step 13
Add 10g of powdered sugar and mix until smooth. For added texture and flavor, you can mix in chopped almonds or chocolate jam if desired. (If you have almond flour, it can also be incorporated here.)
Step 14
Lightly grease your muffin tin with butter or oil to prevent sticking. Fill each muffin cup about 20-30% full with the green tea batter, then add a dollop of your chosen filling. Top with more batter, filling the cups to about 80% capacity – be sure not to overfill, as the muffins will rise. Bake in the preheated 180°C (350°F) oven for 15 to 20 minutes.

This is how the muffins look after about 10 minutes in the oven. They’re starting to puff up nicely.

Here are the muffins after a total of 20 minutes of baking. They have a lovely golden-brown color.

Carefully remove the baked green tea muffins from the oven, let them cool slightly in the tin, then transfer them to a wire rack to cool completely. Enjoy your delicious homemade green tea muffins!
