Ingredients

  • 2 sweet potatoes (medium size)
  • 1/4 onion
  • A little bit of carrot (enough to julienne)
  • 10 perilla leaves
  • 2 cups tempura flour
  • 1 1/3 cups water

First, let’s make the batter, the key to delicious vegetable fritters. In a bowl, add 2 cups of tempura flour and pour in 1 1/3 cups of water. Mix well to create a slightly thick batter that will coat the vegetables nicely. The goal is a smooth consistency without lumps!

Now it’s time to prepare the star ingredient: sweet potatoes. I used two medium-sized sweet potatoes, but if yours are large, one might be enough. Wash the sweet potatoes thoroughly, peel them, and then julienne them into thin strips so the batter can coat them well.

Julienne the other vegetables to a similar thinness as the sweet potatoes. Use a small amount of carrot for color. Stack about 10 perilla leaves, roll them up, and slice them thinly. Finely julienne 1/4 onion as well.

Now, add the prepared vegetables to the tempura batter. Start by adding the julienned sweet potatoes, carrots, and perilla leaves to the batter and mix lightly. Be careful not to make the batter too thin, as the vegetables will release some moisture. Mix gently.

Finally, add all the julienned onions and mix everything thoroughly so the batter evenly coats all the vegetables. Vegetable fritters are best when packed with plenty of vegetables! Ensure all ingredients are well-coated with the batter.

Generously fill a pan with cooking oil and heat it to the ideal temperature for frying. Once the oil is hot enough, carefully spoon portions of the vegetable mixture into the hot oil. You can shape them into rounds or flat patties as you prefer.

Fry the vegetable fritters in the abundant hot oil, turning them over until golden brown and crispy on both sides. Because we used tempura flour, they will become wonderfully crisp. Once one side is golden, flip it over and fry the other side until equally crispy. Your delicious vegetable fritters are ready!
