- 1 Tbsp sugar
- 1 Tbsp minced green onion
- 1 Tbsp minced garlic
- 2 Tbsp minced onion
- 1 Tbsp sesame oil (for finishing)
- 1 Tbsp oyster sauce
Cooking Instructions
Step 1
Start by tenderizing the chicken drumettes and removing any gamey odors. Place the drumettes in a bowl and pour 1 cup of milk over them. Let them soak for about 20 minutes. The milk will effectively neutralize any unwanted smells.
Step 2
After soaking, rinse the chicken drumettes thoroughly under cold running water. Pat them dry, then lightly season with a pinch of salt and a sprinkle of black pepper. This initial seasoning enhances the chicken’s natural flavor.
Step 3
Add 3 tablespoons of cornstarch to the seasoned drumettes and toss well until each piece is evenly coated. Coating the drumettes with cornstarch will help them achieve a crispy exterior when fried and allow the glaze to adhere better.
Step 4
Heat a generous amount of cooking oil in a frying pan over medium-high heat. Carefully place the cornstarch-coated drumettes into the hot oil, ensuring they are not overcrowded. Leave some space between each piece for even cooking.
Step 5
As the drumettes begin to brown, add the glaze ingredients: 5 tablespoons of soy sauce, 1 tablespoon of minced garlic, 1 tablespoon of minced green onion, 3 tablespoons of cooking wine, and 1 tablespoon of sugar. If you prefer a saltier taste, feel free to add a little more soy sauce to adjust the seasoning to your preference.
Step 6
Continue to pan-fry the drumettes, flipping them occasionally until they are golden brown on all sides. Maintain a medium-low heat and cook for about 10 minutes, ensuring even browning and cooking through.
Step 7
Once the drumettes are nicely browned, add all the remaining soy glaze ingredients to the pan. (These are the ingredients not added in Step 4).
Step 8
Add the 2 tablespoons of minced onion to the pan. The onions will add a deeper flavor complexity and a subtle sweetness to the glaze.
Step 9
Cover the pan with a lid and let the drumettes simmer over medium-low heat for about 10 minutes. Stir occasionally to prevent sticking and ensure the glaze coats the drumettes evenly. Simmering will make the drumettes tender and allow the flavors to meld beautifully.
Step 10
As the drumettes simmer, you’ll notice their color deepen to a rich, appetizing brown. They’ll look glossy and incredibly tempting!
Step 11
Now, add 1 tablespoon of oyster sauce to the pan. This is a secret ingredient that will significantly enhance the umami and depth of the glaze, making it even more savory and delicious.
Step 12
Simmer uncovered for another 5 minutes until the glaze has thickened slightly. Finally, drizzle 1 tablespoon of sesame oil over the drumettes and stir to finish. The nutty aroma of sesame oil completes the dish.
Step 13
And there you have it – a perfectly delicious soy-glazed chicken drumette dish! Enjoy the chewy exterior and tender, juicy interior. Pro-Tip: For an extra chewy texture, transfer the finished drumettes to an air fryer and cook at 180°C (350°F) for 10 minutes. These drumettes are fantastic as a side dish, a snack, or an appetizer!
