Main Ingredients

  • 400-600g thinly sliced pork belly (daepae samgyeopsal)
  • 300g bean sprouts (washed and drained)
  • 1/2 handful sliced garlic (thinly sliced)
  • 1/2 onion (thinly sliced)
  • Other leftover vegetables (optional, e.g., carrots, bell peppers)
  • 1 handful chopped scallions or thinly sliced green onions (for garnish)

Seasoning Ingredients

  • 1 Tbsp Mirin (or cooking wine)
  • 1.5 Tbsp Soy Sauce
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Oyster Sauce

Cooking Instructions

Step 1

First, gently pat the thinly sliced pork belly with paper towels to remove any excess blood. Place the pork belly in a bowl and add 1 Tbsp mirin, 1.5 Tbsp soy sauce, and 1 Tbsp minced garlic. Mix well with your hands and let it marinate for about 10 minutes. This step helps to remove any unwanted odors and allows the flavors to penetrate the meat.

Step 1

Step 2

Heat a pan over medium heat and add a little cooking oil. Add the sliced garlic and stir-fry until fragrant. Once the garlic is lightly golden, add the thinly sliced onion and stir-fry until the onion becomes translucent, which will bring out its natural sweetness.

Step 2

Step 3

When the onions are cooked, add the marinated thinly sliced pork belly to the pan. Stir-fry over high heat until the pork is cooked through. Stir in 1 Tbsp of oyster sauce for an extra layer of savory flavor. Finally, add the chopped scallions or thinly sliced green onions and stir-fry briefly. (Tip: You can add a handful of shredded cabbage at this stage, but be mindful that it releases water. You can omit it or adjust the amount according to your preference.)

Step 3

Step 4

Now, evenly spread the washed and drained bean sprouts (300g) over the pork and vegetables in the pan. Cover the pan with a lid and cook over medium-low heat for about 2-3 minutes, just until the bean sprouts soften slightly. Be careful not to overcook them, as they can become mushy.

Step 4

Step 5

Remove the lid and gently toss everything together. Your delicious Stir-fried Pork Belly with Bean Sprouts is ready! (Tip: For an extra touch, sprinkle some toasted sesame seeds on top before serving. When I made this, I added some red cabbage, which looked nice, but I think regular cabbage might have been a better choice for the texture. Try using white cabbage for yours!)
