Savory Soy-Glazed Chicken Neck Meat

Chicken neck meat is quite expensive when ordered at restaurants, so I decided to make my own version at home! Here’s my go-to recipe for soy-glazed chicken neck meat!
Main Ingredients- 1kg Chicken Neck Meat (cleaned)
- 1/2 stalk Green Onion
- 6-8 cloves Whole Garlic
Cooking Instructions
Step 1
First, rinse the chicken neck meat thoroughly under cold running water to remove any impurities. Gently trim off any large pieces of fat or blood. It’s important to drain the meat well in a colander; this will help the marinade penetrate better, resulting in a more flavorful dish.
Step 2
Now, let’s make the special soy marinade for the chicken. In a bowl, combine 4 Tbsp soy sauce, 1 tsp black pepper, 2 Tbsp mirin, 1 Tbsp oyster sauce, 1 Tbsp sugar, 2 Tbsp oligodang, and 2 Tbsp minced garlic. Whisk everything together until smooth and well combined. The key is to ensure all the ingredients are evenly distributed.
Step 3
Prepare the vegetables to be cooked with the chicken. Slice the green onion into pieces about 2-3 cm long, roughly the width of two finger joints. For the whole garlic cloves, you can lightly smash them with the side of your knife or slice them about 0.5 cm thick. The garlic will add a wonderful aroma as it cooks.
Step 4
Add the special soy marinade you just prepared to the drained chicken neck meat. Then, toss in the sliced green onion and the smashed or sliced garlic. Now, use your hands to thoroughly mix everything together, ensuring the marinade, green onions, and garlic are evenly distributed throughout the chicken. This ensures every piece is well-coated.
Step 5
You can cook and enjoy the chicken right away, but for the best flavor, we recommend letting it marinate in the refrigerator for 30 minutes to 1 hour. This resting period allows the soy marinade to deeply infuse into the chicken neck meat, creating a chewier texture and a richer, more savory taste. Now, grill it to perfection and enjoy!
