Cook My Way @ Cheesy Brothy Tteokbokki with Leftover Tteokguk Rice Cakes
Don’t let those leftover Tteokguk rice cakes from Lunar New Year go to waste! Learn how to make a simple, cheesy Tteokbokki. This dish features chewy Tteokguk rice cakes coated in a savory, slightly sweet, and spicy broth, topped with melted mozzarella cheese – perfect for a snack or a delightful meal!
Main Ingredients- Tteokguk rice cakes, 1 serving (approx. 150-200g)
- Green onions, a small amount (chopped)
- Mozzarella cheese, desired amount (to taste)
Cooking Instructions
Step 1
First, prepare a pot for cooking the Tteokbokki. Add about the same amount of water you’d use to cook ramen (around 300-400ml). Stir in 1 Tbsp of soy sauce. Then, add the Tteokguk rice cakes and the chopped green onions to the pot.
Step 2
Now, let’s add the seasonings to make it delicious! Add 1-2 Tbsp of Gochujang and 1 Tbsp of Oligodang to the pot and mix well. The amount of Gochujang can be adjusted to your preference for spiciness; start with 1 Tbsp and add more if desired. Oligodang adds gloss and sweetness.
Step 3
Add 1-2 Tbsp of Gochugaru for color and extra spice. Give it a quick stir to dissolve the seasonings, then bring it to a boil over high heat. Once the broth starts bubbling, reduce the heat to medium-low.
Step 4
Tteokguk rice cakes are thinner than regular Tteokbokki rice cakes, so they cook very quickly. As the rice cakes become tender and the sauce thickens slightly, generously sprinkle the mozzarella cheese over the top. Don’t be shy with the cheese if you love it!
Step 5
Cover the pot loosely or leave it uncovered, and let it simmer for just 1-2 minutes until the cheese is beautifully melted. You’ll know it’s ready when the cheese stretches perfectly.
Step 6
Transfer the delicious Tteokbokki with the melted cheese into a serving dish. Finish with a generous sprinkle of sesame seeds for a nutty aroma. Your Cheesy Brothy Tteokbokki is now ready!
Step 7
Enjoy the fantastic combination of spicy-sweet broth, chewy rice cakes, and gooey melted cheese! This makes for a wonderfully satisfying meal or snack.
