Delicious Dried Chives Stir-fry with Great Texture!

This stir-fried dried chives dish offers a wonderfully chewy texture, characteristic of dried vegetables. It’s a simple yet flavorful side dish that’s sure to impress.
Main Ingredients- 2 handfuls rehydrated dried chives
- A little green onion
Seasoning- 1/2 Tbsp minced garlic
- Sesame oil, to taste
- 1/2 Tbsp ginger syrup
- 1.5 Tbsp soy sauce for soup (Jipganjang)
- 100ml kelp or anchovy broth (Dashitmul)
- 2 Tbsp perilla seed powder (Deulkkaegaru)
- 1/2 Tbsp minced garlic
- Sesame oil, to taste
- 1/2 Tbsp ginger syrup
- 1.5 Tbsp soy sauce for soup (Jipganjang)
- 100ml kelp or anchovy broth (Dashitmul)
- 2 Tbsp perilla seed powder (Deulkkaegaru)
Cooking Instructions
Step 1
Prepare the dried chives, which were previously rehydrated, blanched, and frozen. Since they are already prepared, you can start cooking immediately. Rinse them thoroughly under running water and then chop them into bite-sized pieces.

Step 2
Place the prepared dried chives in a large bowl. Add minced garlic, sesame oil, and ginger syrup. Drizzle in the soy sauce for soup evenly over the chives.

Step 3
Gently mix everything with your hands, massaging the chives to let the seasonings marinate. Pre-seasoning dried vegetables like these helps them absorb flavors better, resulting in a more delicious dish.

Step 4
Heat a pan over medium-low heat and add a generous amount of sesame oil. Sauté the chopped green onions until fragrant, creating a flavorful green onion oil. This step adds a wonderful aroma to the dish.

Step 5
Add the pre-seasoned dried chives to the pan and stir-fry them together. Pour in 100ml of the broth and continue to cook until the liquid is mostly absorbed, simmering gently. Once the chives are almost cooked, stir in the perilla seed powder and cook for another minute to add a nutty flavor. Finish by drizzling a little more sesame oil for extra aroma. If you prefer a saltier taste, you can add a bit more traditional soy sauce, but I found this seasoning to be perfect.
