Chicken Wing Preparation- 500g chicken wings
- 1 cup (200ml) milk
Sweet and Savory Soy Glaze- 2 Tbsp olive oil
- 2 Tbsp mirin (cooking wine)
- 1 Tbsp oligosaccharide
- 3 Tbsp soy sauce
- 1/2 Tbsp minced garlic

Cooking Instructions
Step 1
First, rinse the chicken wings thoroughly under running water. Then, submerge them in 1 cup (200ml) of milk for about 10 minutes. This step helps to remove any gamey odor and tenderize the meat. After 10 minutes, drain the milk and pat the chicken wings completely dry with paper towels.
Step 2
Using a knife, make 2-3 shallow scores on the dried chicken wings. Scoring the wings allows the marinade to penetrate deeper, resulting in more flavorful chicken.

In a mixing bowl, combine all the glaze ingredients: 2 Tbsp olive oil, 2 Tbsp mirin, 1 Tbsp oligosaccharide, 3 Tbsp soy sauce, 1/2 Tbsp minced garlic, and a pinch of black pepper. Whisk until well combined to create a delicious marinade. Add the scored chicken wings to the marinade and gently mix with your hands. Let them marinate for about 10 minutes. This marinating process helps the glaze adhere to the wings, enhancing their flavor when cooked.
