Tuna Gochujang Stir-fry Ingredients

  • 2 cans tuna (85g each)
  • 1/2 onion
  • 1 red chili pepper
  • 1 green chili pepper

Tuna Gochujang Stir-fry Seasoning

  • 3 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp oligodang (corn syrup or other liquid sweetener)
  • 1 Tbsp minced garlic
  • 1 Tbsp mirin (or cooking wine)
  • 1 Tbsp sesame oil

Buchu Bibimbap (Serves 1)

  • 1/2 bowl mixed grain rice
  • 1 cup chives
  • 1 egg (for fried egg)
  • 2 Tbsp tuna gochujang stir-fry (for mixing with rice)

Cooking Instructions

Step 1

First, prepare the chili peppers and onion. Cut the red and green chili peppers in half, remove the seeds, and then finely chop them. Finely chop the onion as well. Finely chopping the vegetables helps the seasoning blend better with the ingredients.

Step 1

Step 2

We’ll be using the oil from the tuna cans! Open the tuna cans, place them in a sieve, and gently press with a spoon to drain the oil thoroughly. The tuna oil adds flavor to the dish and allows for a cleaner stir-fry without needing separate cooking oil.

Step 2

Step 3

Heat a pan over medium heat. Add 1-2 tablespoons of the drained tuna oil, then add the chopped onion, chili peppers, and 1 tablespoon of minced garlic. Stir-fry until fragrant. Once the vegetables start to look translucent, the base for your delicious stir-fry is ready.

Step 3

Step 4

Now, add the drained tuna and stir-fry it with the vegetables. Tuna cooks quickly, so be careful not to overcook it. Stir gently to combine the ingredients evenly.

Step 4

Step 5

It’s time to add the delicious seasoning. Add 3 tablespoons of gochujang and 1 tablespoon of oligodang for sweetness.

Step 5

Step 6

After adding the gochujang and oligodang, stir-fry everything until well combined. Since we used chopped vegetables and tuna, there’s no need to add extra water. Just stir-fry until the ingredients and seasoning come together. Cook until it reaches your desired consistency, then turn off the heat. It’s important not to overcook, as it can become too salty.

Step 6

Step 7

Finally, drizzle in 1 tablespoon of sesame oil for extra flavor and give it a quick mix. Your delicious ‘Tuna Gochujang Stir-fry’ is complete! It’s great mixed with fluffy rice or even used as a dipping sauce.

Step 7

Step 8

Now, let’s prepare the chives bibimbap. Remove any wilted leaves or debris from the chives and wash them thoroughly under running water. Then, chop them into bite-sized pieces (about 1cm long).

Step 8

Step 9

Make a fried egg. Preheat a pan over medium-low heat, add a little cooking oil, and carefully crack the egg into the pan. You can make it sunny-side up with a runny yolk or cook it through until well-done, depending on your preference. Cook until nicely done and set aside on a plate.

Step 9

Step 10

Place half a bowl of mixed grain rice in the center of a serving bowl. Arrange the prepared chives in a circle around the rice. Top with the nicely fried egg, and then add about 2 tablespoons of the tuna gochujang stir-fry sauce, enough to mix well with the chives and rice. Mix everything together for a wonderful meal! You can add extra sesame oil or sesame seeds to your liking.
