- 2 Tbsp Mirin (or cooking wine)
- 2 Tbsp Gochugaru (Korean chili powder)
- 1 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Minced Garlic
- 1.5 Tbsp Soy Sauce (Guk-ganjang or Jin-ganjang)
- 2 Tbsp Mirin (or cooking wine)
Cooking Instructions
Step 1
First, let’s prepare the seasoning paste for a delicious Budae Jjigae. In a bowl, combine 2 Tbsp Gochugaru, 1 Tbsp Gochujang, 2 Tbsp minced garlic, 1.5 Tbsp soy sauce, and 2 Tbsp mirin. Mix them well in advance. (Measurements are based on standard Korean adult soup spoons.)
Step 2
Once the seasoning paste is ready, it’s time to prepare the other ingredients for the Budae Jjigae. For a clean and flavorful stew, make sure to slice all the ingredients nicely.
Step 3
Slice the onion into strips to add a subtle sweetness, and cut the scallions diagonally for a fresh aroma. Slice the Spam and sausages (the star ingredients of Budae Jjigae) according to your preference. (Cubing Spam and slicing sausages at an angle makes them look more appetizing.)
Step 4
Cut half a block of tofu into bite-sized pieces to add a soft texture to the stew.
Step 5
Now, let’s arrange the ingredients beautifully in the pot. Place the sliced onions and scallions around the edges of the pot. In the center, arrange the chopped kimchi and ground beef.
Step 6
Spoon the prepared seasoning paste over the ingredients, and then pour in the beef bone broth pack to enhance the deep flavor. The beef bone broth will elevate the taste of the ingredients, creating an even richer Budae Jjigae.
Step 7
Once the broth begins to boil, use chopsticks or a spoon to gently loosen the seasoning paste, stirring it into the broth so it distributes evenly. Let it simmer as the ingredients meld together, developing a deep flavor.
Step 8
As the stew simmers, skim off any foam that rises to the surface with a spoon for a cleaner, clearer broth. If you wish to add ramen or udon noodles, add them after the seasoning paste has dissolved and let them cook together. For an extra creamy and rich taste, place a slice of cheese on top at the end to melt!
