Main Ingredient- 1 bunch of Korean perilla leaves (cleaned and trimmed)
Optional Ingredient (for spicy kick)- 2 Cheongyang chili peppers
Seasoned Sauce Ingredients- 8 Tbsp Korean soy sauce (jin ganjang)
- 0.5 Tbsp sugar
- 1 Tbsp red chili flakes (gochugaru)
- 0.5 Tbsp minced garlic
- 1 Tbsp plum extract (maesil-cheong)
- 0.5 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 2 Cheongyang chili peppers

- 0.5 Tbsp sugar
- 1 Tbsp red chili flakes (gochugaru)
- 0.5 Tbsp minced garlic
- 1 Tbsp plum extract (maesil-cheong)

- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First, wash the Korean perilla leaves thoroughly under running water to remove any soil or debris. Trim off any wilted or dirty parts, and gently pat them dry.
Step 2
Place the cleaned perilla leaves on a cutting board and finely chop them into small pieces, about 0.5 cm in size, using a knife. Chopping them finely ensures the sauce flavors penetrate well. Aim for a ‘songsong’ chop (very finely minced).
Step 3
If you’d like to add a spicy kick, wash 2 Cheongyang chili peppers, remove the seeds, and mince them finely. You can omit this step if you prefer less spice.
Step 4
Now it’s time to make the delicious seasoned sauce. In a bowl, combine all the sauce ingredients: 8 Tbsp soy sauce, 0.5 Tbsp sugar, 1 Tbsp red chili flakes, 0.5 Tbsp minced garlic, 1 Tbsp plum extract, 0.5 Tbsp sesame oil, and 1 Tbsp toasted sesame seeds. All measurements are based on a standard Korean tablespoon (bapsutgarak).
Step 5
Stir the sauce ingredients with a spoon until well combined. Mix thoroughly until the sugar is dissolved and all the seasonings are evenly blended. This creates your flavorful sauce base.
Step 6
Finally, add the chopped perilla leaves to the bowl with the prepared sauce and gently mix them together. Toss lightly to avoid bruising the perilla leaves, which helps preserve their fresh aroma and texture. Your fragrant and delicious seasoned perilla leaf sauce is now complete!
