Main Ingredients

  • 200g prepared codfish
  • 50g cod roe
  • 100g fresh clams (e.g., Manila clams)
  • 50g Korean parsley (Minari)
  • 50g bean sprouts
  • 50g daikon radish
  • 1/2 white part of a leek

Seasoning & Broth

  • 1 tsp soy sauce (or salt to taste)
  • A pinch of black pepper
  • 1/2 tsp cooking wine (to remove fishy odor)
  • Ample water (for broth)

Cooking Instructions

Step 1

First, prepare the vegetables for the Daegu Jiriguk. Slice the daikon radish into roughly 0.5cm thick, bite-sized pieces. Cut the Korean parsley (Minari) into segments about 5cm long. Cut the white part of the leek into two pieces, then slice it to a similar length as the Minari. (Optional: For a slightly spicy kick, thinly slice half a chili pepper diagonally.)

Step 1

Step 2

In a pot, bring a generous amount of water to a boil. Add the clams first to create a flavorful broth. Once the clams start to open, add the sliced daikon radish and let it simmer. When the radish becomes translucent, carefully add the prepared codfish. Be mindful not to overcook the codfish, as it can become mushy.

Step 2

Step 3

Add the tender and rich cod roe. Season the broth lightly with soy sauce (or salt) to your preference. Skim off any foam that rises to the surface during simmering; this will ensure a clearer and cleaner broth. Add a pinch of black pepper to enhance the aroma.

Step 3

Step 4

Finally, add the prepared Korean parsley (Minari) and leek, and simmer for another moment. The Minari should just wilt to maintain its crisp texture and fresh aroma. Once all ingredients are well combined, your refreshing and clear Daegu Jiriguk is ready! Enjoy it while it’s hot.
