Today, I’m sharing stuffed cucumbers made with cucumbers I grew myself! These are prepared in a convenient bite-sized format for easy eating. Typically, stuffed cucumbers are cut into about 5cm pieces, but cutting them into 1.5~2cm pieces means you don’t need to cut them again when serving, which many find much more convenient! Main Ingredients

  • 6 cucumbers
  • 100g chives
  • 1/2 onion
  • A small amount of carrot
  • 1 red chili pepper

Brining Solution

  • 4 cups water
  • 4 Tbsp coarse sea salt

Stuffing Seasoning

  • 5 Tbsp chili powder
  • 2 Tbsp anchovy sauce
  • 1 Tbsp tuna extract
  • 1 Tbsp minced garlic
  • 1 Tbsp sugar

Cooking Instructions

Step 1

First, wash the chives thoroughly and chop them into approximately 1cm pieces. Finely dice the onion and carrot into similar small pieces.

Wash the fresh cucumbers well, then cut them into bite-sized pieces of about 1.5cm to 2cm.

Tip! Here’s a trick to ensure the cuts don’t go all the way through when making the cross-shaped slits for stuffing: Place a wooden chopstick next to the cucumber before you start cutting. This will stop the knife from cutting all the way through, making it perfect for stuffing.

In a pot, combine 4 cups of water and 4 tablespoons of coarse sea salt. Bring the mixture to a rolling boil. Boiling the salt water makes the cucumbers crispier when brined.

Pour the vigorously boiling salted water over the cut cucumbers, ensuring they are submerged. To keep the cucumbers from floating, place a heavy plate on top. Let them brine for about 30 minutes.

While the cucumbers are brining, place the chopped chives, diced onion, and carrot in a bowl. Thinly slice the red chili pepper and add it to the mixture.

Now, let’s make the stuffing! To the bowl with the chives, onion, carrot, and red chili, add 5 tablespoons of chili powder, 2 tablespoons of anchovy sauce, 1 tablespoon of tuna extract, 1 tablespoon of minced garlic, and 1 tablespoon of sugar. Mix everything thoroughly until the seasonings are well combined. Gently squeeze any excess water from the brined cucumbers, then carefully stuff the prepared filling into the cross-shaped slits of each cucumber piece.

You can enjoy the stuffed cucumbers immediately after making them, or let them sit at room temperature for a few hours before refrigerating. We packed ours into small containers and stored them in the refrigerator.
