Main Ingredients- Curry powder 100g
- Sausage 130g
- 1 Onion
- 2 Potatoes
- 3.5 cups Water (approx. 700ml)
Seasoning- 2 Tbsp Soy Sauce

Cooking Instructions
Step 1
First, peel the potatoes and onion and prepare them.
Step 2
Thinly slice the onion. This helps it break down nicely into the curry as it cooks.

Dice the potatoes into roughly 2cm cubes. Cutting them too small might cause them to disintegrate during cooking.

Now, prepare your pot and add a generous amount of cooking oil to the bottom. This is important to prevent ingredients from sticking.

Add the sliced onions to the pot and start sautéing them slowly over low heat.

Once the onions become translucent, continue to sauté them slowly, stirring occasionally, until they turn a gentle brown color. This process adds sweetness to the curry.

When the onions are sufficiently sautéed, add the diced potatoes and stir-fry them together. Ensure the potatoes are coated with oil.

Now it’s time to add the curry powder. Distribute it evenly to prevent clumps.

After adding the curry powder, gently stir with a spatula to mix it well with the potatoes and onions. You should start to smell the fragrant curry.

When adding the water, start by pouring in a small amount at first, mixing well to dissolve any clumps of curry powder. This step helps prevent lumps later on.

Pour in the remaining water, adjust the heat to medium-low, and bring it to a simmer. Cover the pot while it boils.

Once the curry begins to bubble, it’s important to stir occasionally to prevent it from sticking to the bottom. A little care ensures a delicious curry.

Check if the potatoes are tender and cooked through. Then, cover the pot again and let it simmer on low heat until the potatoes are perfectly soft. Be patient while they cook.

While the curry is simmering, score the sausages with a knife. This makes them look appealing when cooked and allows the sauce to penetrate better.

Heat a pan with a little oil and pan-fry the scored sausages until lightly browned. Slightly browning the exterior enhances their flavor.

Now it’s time to cook the udon noodles. Bring a pot of plenty of water to a rolling boil, then add the udon noodles and cook according to the package instructions.

While the noodles are cooking, add 2 tablespoons of soy sauce to the curry to deepen the flavor and adjust the seasoning to your liking. Taste and adjust as needed.

Drain the cooked udon noodles in a colander and place them neatly into a serving bowl.
