Salad Ingredients

  • 1/2 head Lettuce
  • 40g Carrot
  • 1/2 pack.~(\text{approx. 20-30g})~Radish Sprouts
  • 1/4 Onion

Shabu-Shabu Broth

  • 2 cups Water
  • 50g Sake (for removing odor)

First, prepare the star of our dressing: the sesame seeds. Lightly toast the sesame seeds in a dry pan to enhance their aroma and remove any raw taste. Once cooled, grind them into a fine powder. This toasting step is key for a deeper flavor!

In a mixing bowl, combine the ground sesame seeds with vinegar and soy sauce. Add the sugar and whisk everything together thoroughly. Using a whisk helps to create a smooth, emulsified base for the dressing.

Gradually drizzle in the grapeseed oil while continuously whisking. Continue until the oil is fully incorporated and the dressing is smooth and creamy. This process is called emulsification and results in a beautifully cohesive dressing. Set aside.

In a pot, combine 2 cups of water and 50g of sake. Bring this mixture to a boil. Meanwhile, carefully separate the slices of Korean beef for shabu-shabu and tear them into bite-sized pieces.

Once the water and sake mixture is boiling, gently add the shabu-shabu beef slices one by one. Cook them very briefly, just until the pink color disappears (about 30-60 seconds). Immediately remove the beef from the boiling liquid to prevent it from becoming tough. Drain well.

Prepare the salad greens. Tear the lettuce into bite-sized pieces. Thinly slice the onion. Using a mandoline or a sharp knife, julienne the carrot into thin strips. Place all these prepared vegetables in a bowl of cold water for a few minutes to crisp them up. Drain them well before mixing.
