  • Pollack Roe 1 Tbsp (including seasoning)
  • Squid Roe (Jjigae Roe) 1 Tbsp (including seasoning, adjust to taste)
  • Green Onion 1/4 stalk (approx. 1 handspan)
  • Cooked Rice 1 bowl (warm)

Cooking Instructions

First, prepare all the ingredients for your fried rice. Have your warm rice, green onion, pollack roe, and squid roe ready.

Chop the green onion. For easier mincing, first cut it into 2-3cm lengths, then make a cross (+) cut in each piece before finely mincing it with your knife.

Heat a pan over medium heat and add 2 tablespoons of olive oil. Once the oil is warm, add the minced green onion.

Sauté the green onions over medium-low heat. Be careful not to burn them; slow sautéing is key to developing their aroma.

This process creates ‘green onion oil,’ which enhances the fried rice’s flavor profile and prevents it from tasting greasy, resulting in a cleaner taste. It’s like magic!

When the green onions are lightly browned and fragrant (they’ll look slightly translucent or have golden edges, like in the photo),

Add the warm cooked rice to the pan. If the rice is clumped together, gently break it apart with your spatula.
