Aralia shoots (dureup) are in season right now! Here’s a wonderfully simple recipe for seasoned dureup, shared by Chef Won Hyung-ho from the popular Korean cooking show ‘Altolan’. It’s the perfect way to enjoy the fresh flavors of spring.
Super Simple Dureup Seasoning- 5 Aralia Shoots (Dureup)
- Pinch of salt (for blanching)
- 1 Tbsp Perilla Seed Powder (for garnish)
Flavorful Seasoning Sauce- 1 Tbsp Soy Sauce
- 1 Tbsp Perilla Oil
- 1/2 Tbsp Minced Garlic
- Pinch of salt (to taste)
- 1/2 Tbsp Sesame Seeds
- 1 Tbsp Soy Sauce
- 1 Tbsp Perilla Oil
- 1/2 Tbsp Minced Garlic
- Pinch of salt (to taste)
- 1/2 Tbsp Sesame Seeds
Cooking Instructions
Step 1
Gently wash the aralia shoots under running water. Trim off the tough woody ends. You can make a small slit along the stems with a knife to help the seasoning penetrate better.
Step 2
Bring a pot of water to a boil and add a pinch of salt. Carefully add the thicker stem ends of the aralia shoots to the boiling water for about 20 seconds, then add the leafy parts for another 40 seconds, for a total blanching time of about 1 minute. Immediately transfer the blanched shoots to an ice bath to stop the cooking process. Once cooled, gently press out excess water.
Step 3
Prepare the seasoning sauce. In a small bowl, combine 1 tablespoon of soy sauce, 1 tablespoon of perilla oil, 1/2 tablespoon of minced garlic, and 1/2 tablespoon of sesame seeds. Mix well. Taste and adjust seasoning with a tiny pinch of salt if needed.
Step 4
Add the blanched and drained aralia shoots to the seasoning sauce. Gently toss to coat each piece evenly. Be careful not to overmix, as this can break the delicate shoots. Finally, sprinkle 1 tablespoon of perilla seed powder over the top for an extra nutty aroma and flavor. Your delicious seasoned aralia shoots are ready!
