Main Ingredients
  • 1/2 block firm tofu (approx. 150g)
  • 2 Tbsp cooking oil
  • 1 packet ramen noodles (including seasoning packet)
  • 500ml water (about 2 cups)
  • 2 Tbsp red pepper flakes (gochugaru)
  • 1 Cheongyang chili pepper
  • 1 Tbsp sesame seeds

Cooking Instructions

Step 1

First, prepare half a block of tofu. Place the tofu in a preheated frying pan and mash it with a spoon while stir-frying. It’s crucial to cook over medium heat to evaporate the tofu’s moisture. This process will give the tofu a nuttier, chewier texture.

Step 2

Once most of the tofu’s moisture has evaporated, reduce the heat to low-medium. Now, add about 2 tablespoons of cooking oil to coat the pan and prevent the tofu from sticking.

Step 3

Add 2 tablespoons of red pepper flakes, the key to its spicy flavor. Stir-fry them with the tofu over low heat, being careful not to burn the flakes, to release their aroma.

Step 4

Finely chop one Cheongyang chili pepper for an extra kick and add it to the pan. Sauté with the other ingredients for about 30 seconds to infuse the spicy and slightly pungent flavor into the mixture.

Step 5

Pour in 500ml (about 2 cups) of water. Scrape the bottom of the pan to incorporate all the delicious bits of flavored tofu and spices into the broth.

Step 6

Once the water comes to a rolling boil, add the ramen noodles and the seasoning packet. Stir well to dissolve the seasoning, and your flavorful ramen broth is ready.

Step 7

While the ramen is cooking, prepare the sesame seeds for a nutty finish. If you have a mortar and pestle, grind the sesame seeds until they are fine. Grinding them will enhance their aromatic qualities.

Step 8

If you don’t have a mortar and pestle, you can use the back of a spoon or another heavy object to crush the sesame seeds, either inside their packet or in a small bowl. Aim for a fine, crumbly texture.

Step 9

When the ramen noodles reach your desired tenderness, turn off the heat. Be careful not to overcook them, as they can become mushy. Transfer the cooked ramen to a serving bowl.

Step 10

Finally, sprinkle the freshly ground sesame seeds generously over the ramen. Your delicious and aromatic Tofu Ramen is complete! Enjoy this healthy and satisfying meal.
