- Eggs, 1-2 (for garnish, optional)
- Dried flat glass noodles, a handful (optional, soaked beforehand)

Cooking Instructions
Step 1
First, soak the beef ribs in cold water for at least 1 hour to thoroughly remove any blood. Removing the blood will ensure a clear broth and prevent any gamey flavors. It’s even better if you change the water once or twice during this process.
Step 2
In a large pot, add 2.6L of water and bring it to a boil. Once boiling, reduce the heat and add the blood-drained beef ribs, 6 whole garlic cloves, and 1/2 cup of chopped white green onion parts, preferably enclosed in a cheesecloth or mesh bag for easy removal later. Add these to the boiling water.
Step 3
Once the water comes to a rolling boil, reduce the heat to medium-low, cover the pot, and simmer for about 1.5 to 2 hours, or until the beef ribs are very tender. Skim off any foam or scum that rises to the surface to maintain a clear broth.
Step 4
When the beef ribs are almost cooked and tender, add the prepared radish and continue to simmer together for another 15-20 minutes. The radish will become translucent and tender, adding a refreshing sweetness to the soup.
Step 5
Once the ribs and radish are fully cooked, stir in 2 Tbsp of shiitake mushroom powder and mix well. Season with salt to your preference. (If you wish to add abalone, add the cleaned abalone at this stage and simmer for only about 5 minutes. Overcooking will make the abalone tough.)
Step 6
