Cooking Instructions

Step 1

Let’s start by preparing the stars of our delicious pot rice: the abalone and deodeok! To reduce any bitterness from the deodeok, soak the roots in lightly salted water for about 10 minutes. For the abalone, use a soft brush to scrub it thoroughly, paying attention to the area between the shell and the meat. Carefully detach the meat from the shell, and separate the innards from the meat. These innards will add a wonderful depth of flavor to the rice.

Step 1

Step 2

Now, it’s time to get the ingredients ready to infuse their rich flavors. Thinly slice the abalone meat. For the abalone innards, use kitchen scissors to finely mince them; this will help them blend beautifully into the rice and sauce. Prepare the deodeok by gently pounding it with the back of a knife or a mallet on a cutting board until it softens. Then, following the grain of the deodeok, carefully shred it into small pieces by hand. This technique allows the seasonings to penetrate better, enhancing the flavor.

Step 2

Step 3

The fundamental step for delicious rice! Prepare your short-grain rice. Rinse the rice lightly in a sieve under running water to remove excess starch. Then, let it soak in clean water for 30 minutes. Soaking the rice helps it cook evenly and results in a fluffier, more lustrous texture.

Step 3

Step 4

Now, let’s add special ingredients to the pot to enhance the flavor of the rice. Spread the sliced abalone meat and minced abalone innards evenly at the bottom of your cooking pot. Drizzle generously with 2 tablespoons of fragrant and nutty perilla oil. Importantly, set aside a few slices of abalone for garnish later. These will be used to decorate the pot rice just before serving.

Step 4

Step 5

Turn the heat to medium and begin to sauté. Stir the abalone innards for about 2-3 minutes, until their fishy aroma dissipates and a rich, nutty fragrance emerges. Sautéing the innards first will significantly deepen the flavor profile of the pot rice.

Step 5

Step 6

Add the well-soaked rice to the pot with the sautéed innards. Stir and sauté the rice for about 5 minutes, ensuring the grains are coated with the perilla oil and innards mixture. It’s crucial to toast the rice until the grains become slightly translucent and separate. If you notice the rice starting to stick to the bottom of the pot, add a small amount of water and continue sautéing. Pre-toasting the rice this way makes it chewier and more delicious.

Step 6

Step 7

Now it’s time to add the cooking water. Pour water over the sautéed rice so that the water level is about 1 cm higher than the rice. Once the water is added, securely cover the pot with its lid.

Step 7

Step 8

Place the pot on the stove over high heat and bring it to a boil. As soon as the water starts to bubble vigorously, reduce the heat to low. Let it simmer gently on low heat for another 5 minutes to ensure the rice grains are cooked through and moist.

Step 8

Step 9

After simmering on low heat for 5 minutes, carefully lift the lid and gently stir the rice. Mix the rice gently to prevent clumping. Then, artfully arrange the shredded deodeok and the reserved abalone slices on top of the rice. Cover the pot again and let it cook on low heat for another 5 minutes. Finally, turn off the heat and let the rice steam, covered, for 15 minutes. This steaming process is key to achieving perfectly tender and flavorful rice.

Step 9

Step 10

While the rice is steaming beautifully, let’s prepare the accompanying seasoning sauce. In a bowl, combine the soy sauce and red pepper flakes as the base. Add plenty of finely chopped onion and green onion. Using generous amounts of vegetables will allow their natural sweetness and moisture to infuse the sauce, creating a delicious condiment. You can adjust the sweetness and savory notes by adding minced garlic and oligosaccharide according to your preference.

Step 10

Step 11

Finally, after 15 minutes of steaming, lift the lid! Behold, a steaming pot filled with visually appealing golden rice, fragrant deodeok, and tender abalone! The rice is perfectly cooked – not burnt, not mushy, but beautifully fluffy. This is a luxurious Abalone and Deodeok Pot Rice, a harmonious blend of healthy ingredients and delightful flavors. Enjoy it with the warm seasoning sauce for a truly satisfying meal!
