Main Ingredients- 7 fresh live abalones
- 21 whole garlic cloves (or 2 Tbsp minced garlic)
- 20g unsalted butter
- Generous amount of cooking oil
- Pinch of salt
Cooking Instructions
Step 1
To ensure cleanliness, thoroughly scrub the abalone shells with a toothbrush or a soft brush. Make sure to remove any debris from between the shells.
Step 2
Now, let’s separate the abalone meat from the shell. Carefully insert a spoon between the abalone meat and the shell, and gently pry it open like a lever to easily detach them.
Step 3
Remove the tough innards from the detached abalone meat using a knife or scissors. Also, trim off the hard mouthparts (teeth) located at the top of the abalone’s head with scissors for easier eating.
Step 4
Next, score the abalone meat. Use the tip of your knife to make shallow crosshatch or diamond patterns on the surface of the abalone. This helps the seasoning penetrate better and results in a more tender texture when cooked.
Step 5
Heat a generous amount of cooking oil in a pan over medium heat. Add the whole garlic cloves and stir-fry them as if you were deep-frying. Stir occasionally to prevent burning and cook until they become golden brown and aromatic. This step is crucial for developing a savory flavor.
Step 6
Once the garlic starts to turn a delicious golden color, carefully drain some of the excess oil from the pan. Then, add the prepared abalone and stir-fry together. Be careful to prevent the abalone from sticking to the pan, and flip them occasionally to cook evenly.
Step 7
When the garlic is evenly golden brown and the abalone surfaces are starting to cook, add the 20g of cold butter and stir-fry until it melts. The melting butter will coat the abalone and garlic with a rich, savory flavor and give them a glossy finish. Be mindful of the heat to prevent the butter from burning.
Step 8
Finally, artfully arrange the perfectly cooked Abalone Butter Sear on a plate. Garnish with the savory garlic cloves that were stir-fried alongside. For an extra touch, you can sprinkle a little parsley flakes for decoration.
