Begin by preparing the fresh Abalone Mushrooms. Rinse them thoroughly under running water 2-3 times to remove any dirt or debris. After washing, place them in a colander to drain excess water.

Bring a pot of water to a rolling boil. Add a pinch of salt to the boiling water. Carefully add the Abalone Mushrooms, starting with the stems as they are slightly tougher, and blanch for about 1 minute. Be careful not to overcook, as this can make the texture mushy.

Immediately transfer the blanched Abalone Mushrooms to a bowl of cold water to stop the cooking process and preserve their crispness. Gently press them with your hands to squeeze out as much water as possible.
