Abundant Ham Kimchi Stir-fry
A Hearty Kimchi Stir-fry Recipe Packed with Delicious Ham
This is a recipe for a kimchi stir-fry generously loaded with ham, offering a rich flavor and satisfying texture. It’s a perfect way to use up leftover ham and kimchi!
Main Ingredients- 300g Ham (generous amount)
- 600g Well-fermented Kimchi
Cooking Instructions
Step 1
First, check and prepare all your ingredients. Finely chop the scallions and cut the kimchi into bite-sized pieces. Using well-fermented kimchi will yield a deeper flavor.
Step 2
Cut the ham into pieces slightly smaller than bite-sized, or similar to the size of diced radish. This ensures the ham blends well with the kimchi when stir-fried.
Step 3
Heat 4 tablespoons of cooking oil in a frying pan over medium heat. Add the chopped scallions and sauté until fragrant.
Step 4
Add about 1.5 tablespoons of minced garlic and stir-fry for about 1 minute over medium heat until the garlic is fragrant. Be careful not to burn the garlic.

Add all the cut ham to the frying pan and stir-fry it with the aromatics. The ham will release some of its own fat, enhancing the overall flavor.

Now, add the prepared kimchi. Stir-fry everything together over medium heat for about 1 minute, ensuring all ingredients are well combined. The kimchi will begin to soften and meld with the ham.

Time to add the seasonings. Add 1 tablespoon of sugar first to balance the sourness of the kimchi and add a touch of sweetness. You can adjust the amount of sugar depending on how sour your kimchi is.

Add 1.5 tablespoons of gochugaru (Korean chili flakes) for color and a pleasant spiciness. If you prefer a spicier dish, feel free to increase the amount.

Pour in 1 tablespoon of fish sauce for an umami boost. Anchovy fish sauce or soy sauce will work well to add depth of flavor.

Add 150ml of water and let it simmer until the mixture thickens. Once water is added, it’s important to stir continuously to prevent sticking to the bottom of the pan.

When the water has mostly evaporated and the ingredients are cooked down, turn off the heat. Then, drizzle in 2.5 tablespoons of perilla oil for a wonderfully nutty aroma and rich finish.

Finally, sprinkle 2 tablespoons of toasted sesame seeds over the top.

Give it one final gentle stir to evenly distribute the perilla oil and sesame seeds. Your delicious ham kimchi stir-fry is now ready! Enjoy it with a hot bowl of rice.
