Main Ingredients
  • Acorn Jelly (Dotorimuk) 380g
  • Crisp Lettuce 5 leaves
  • Cucumber 1/2 medium
  • Bell Pepper 1/2 (any color, optional)
  • Onion 1/4 small

Seasoning Sauce
  • Red Pepper Flakes 2 Tbsp
  • Perilla Powder 1 Tbsp
  • Soy Sauce 3 Tbsp
  • Fish Sauce 1/2 Tbsp
  • Plum Extract 1 Tbsp
  • Oligosaccharide (or corn syrup) 1 Tbsp
  • Minced Garlic 1/2 Tbsp
  • Sesame Oil 2 Tbsp
  • Toasted Sesame Seeds a pinch

Cooking Instructions

Step 1

First, cut the acorn jelly into bite-sized pieces, about 1.5cm thick. Aim for uniform slices to ensure even distribution of dressing.

Step 2

Wash the cucumber thoroughly. Rub its surface with coarse salt to remove any dirt or waxy coating, then rinse well under running water. Slice the cucumber in half lengthwise, then thinly slice it on an angle (about 0.5cm thick).

Step 3

Remove the seeds from the bell pepper and slice it into thin strips, similar in thickness to the cucumber. Slice the onion into thin strips as well, matching the thickness of the bell pepper.

Step 4

Wash the lettuce leaves under cold running water, and gently pat them dry. Tear the leaves into bite-sized pieces by hand for a more rustic texture.

Step 5

In a mixing bowl, combine the seasoning ingredients: red pepper flakes, soy sauce, fish sauce, plum extract, oligosaccharide, minced garlic, and sesame oil. Add the perilla powder and toasted sesame seeds. Whisk everything together until well combined.

Step 6

In a large mixing bowl, add the prepared cucumber, bell pepper, onion, and torn lettuce.

Step 7

Add the sliced acorn jelly to the bowl with the vegetables.

Pour all the prepared seasoning sauce over the vegetables and acorn jelly.

Wearing disposable gloves, gently toss all the ingredients together. Be careful not to mash the acorn jelly; mix until everything is evenly coated with the sauce.
