  • Acorn noodles 80g
  • 1 hard-boiled egg
  • 1 handful shredded cucumber
  • 1 handful shredded carrot
  • 1 handful shredded purple onion
  • Gochujang (Korean chili paste) 1 Tbsp
  • Vinegar 1.5 Tbsp
  • Onion syrup 1 Tbsp (homemade)
  • Gochugaru (Korean chili flakes) 0.5 Tbsp
  • Minced garlic 0.5 Tbsp
  • Soy sauce 0.5 Tbsp (mix of homemade soy sauce + anchovy sauce)
  • Sesame oil, a little
  • Crushed sesame seeds, a little

Cooking Instructions

Step 1

Let’s start by making the delicious sauce! In a bowl, combine gochujang, gochugaru, soy sauce (a mix of homemade soy sauce or anchovy sauce), minced garlic, homemade onion syrup, and vinegar. Tip: Making the sauce ahead of time allows the flavors to meld, resulting in a richer taste. It’s better to use natural ingredients for flavor instead of commercial products containing chemical additives like oyster sauce, fish sauce, or cooking wine. For sweetness, use homemade onion syrup made by simmering onions, or a small amount of pureed apple.

Step 1

Step 2

Add a drizzle of sesame oil and sprinkle with crushed sesame seeds. Mix all the sauce ingredients thoroughly until well combined – your tasty sauce is ready! Taste and adjust the vinegar or sweetness according to your preference.

Step 2

Step 3

Prepare the toppings for a visually appealing and delicious bibim guksu. Halve the hard-boiled egg. Shred the cucumber, carrot, and purple onion thinly. Tip: Soaking the shredded purple onion in cold water for a bit can reduce its pungency, making it milder. You can also add other vegetables like cabbage or bell peppers for variety!

Step 3

Step 4

Get your Korean pure acorn noodles ready (e.g., Hansalim product). Bring a pot of water to a boil and cook the acorn noodles for about 5-6 minutes. Once cooked, rinse them quickly under cold running water to remove excess starch, then drain thoroughly in a colander. Tip: Lightly coating the noodles with sesame oil or perilla oil after draining can prevent them from sticking together and help maintain their texture.

Step 4

Step 5

Add the prepared sauce generously over the drained acorn noodles. Gently toss and mix the noodles with the sauce by hand until evenly coated. It’s important to mix them gently so the sauce coats every strand.

Step 5

Step 6

Transfer the sauced acorn noodles to a serving bowl. Arrange the halved hard-boiled egg and fresh shredded vegetables as toppings beautifully. Your visually appealing and delicious acorn noodle bibim guksu is now complete! Enjoy your meal.
