Cooking Instructions

Step 1

First, let’s make the ‘Mayak Sauce,’ the star of this fried rice! In a bowl, combine 2 Tbsp minced garlic, 1 tsp minced green chili, 1 Tbsp gochugaru, 2g salt, 1 tsp rice wine, 1 tsp sesame oil, 1 Tbsp oligosaccharide, 1 Tbsp water, and 1 Tbsp gochujang. Mix them all together thoroughly with a spoon. (Pro Tip: Making the sauce in advance will make the cooking process much smoother!)

Step 2

Next, we’ll make ‘green onion oil’ (pa-gi-reum) for extra fragrance. Heat 1 Tbsp cooking oil in a pan over low heat. Add 2 Tbsp chopped green onions and sauté slowly until fragrant and translucent. This step infuses the oil with a sweet aroma. (Pro Tip: For an even deeper flavor, you can sauté minced garlic along with the green onions to create a garlic-onion oil!)

Step 3

Keeping the fragrant oil in the pan, add 1 bowl of cold rice and crack 1 egg into the pan. Stir-fry everything together, breaking up any clumps of rice with a spatula. Ensure the egg coats the rice grains evenly as you stir-fry.

Step 4

Once the rice and egg are partially cooked, add all of the prepared ‘Mayak Sauce’ to the pan. Stir-fry quickly to ensure the sauce is evenly distributed throughout the rice, coating every grain.

Step 5

Finally, continue to stir-fry over medium heat for about 2-3 minutes, or until the rice is slightly crispy and has absorbed all the delicious flavors of the sauce. You’ll know it’s done when the rice grains are lightly golden and a wonderful aroma fills your kitchen. Feel free to garnish with shredded seaweed or sesame seeds, if desired.
