First, boil 11 eggs. For this dish, soft-boiled eggs are ideal, but you can adjust to your preference for hard-boiled. If boiling for soft-boiled, place the eggs in boiling water and cook for about 7-8 minutes. Immediately transfer the cooked eggs to cold water to cool; this makes peeling much easier.

Once cooled, carefully peel the shells off the boiled eggs. If the shells are difficult to remove, try peeling them under running water.
