Step 1
The ‘Drug Egg’ recipe is magically simple, taking less than 10 minutes excluding the egg boiling time. It’s perfect for those hot summer days when you don’t want to stand over a hot stove for too long, allowing you to easily prepare a delicious and satisfying side dish.
Step 2
Let’s start with the most crucial part of the ‘Drug Eggs’: boiling the eggs! If you use cold eggs straight from the refrigerator, the shells might stick to the whites, making them difficult to peel. So, remember to take the eggs out of the fridge and let them come to room temperature before you start cooking. Before the water boils, add 1 tablespoon of coarse salt and 1 tablespoon of vinegar to the pot. Then, carefully place the eggs in the water. Once the water comes to a rolling boil, continue to boil for about 7-8 minutes. This duration will result in perfectly soft-boiled eggs with a runny yolk. If you prefer your eggs more cooked or cannot eat soft-boiled eggs, you can boil them for a few minutes longer. Personally, I find the ‘Drug Eggs’ most delicious when the yolk is soft and mingles with the marinade.

While the eggs are boiling, prepare the vegetables that will add flavor to your ‘Drug Eggs’. For the onion, you don’t need to dice it too finely; slightly larger pieces add a pleasant texture. Cut the onion in half, then into quarters.

I had a leftover one, so I threw it in. You can certainly add 1-2 Cheongyang peppers if you like it spicy. It’s not an essential ingredient, so feel free to adjust to your preference.

After boiling the eggs for 7-8 minutes, immediately transfer them to cold water to cool them down. Then, carefully peel off the shells. This is the perfect level of soft-boil I was aiming for! The yolk is just about to run, wonderfully soft, and I’m very satisfied with the result. Eggs cooked to this consistency absorb the marinade beautifully.

Peel all the boiled eggs and arrange them neatly.

Now, let’s make the delicious ‘Drug Eggs’! It’s easy to measure the marinade ingredients using a standard paper cup for a perfect 1:1:1 ratio of soy sauce, water, and sugar. I measured one paper cup of each into a pot. Add 1 tablespoon of minced garlic for that pungent kick and 1 tablespoon of toasted sesame seeds for a nutty aroma. Stir well until the sugar is completely dissolved to prepare the marinade.

Once the sugar is mostly dissolved, add all the prepared vegetables (onion, green onion, chili) to the marinade. Stir gently to allow the flavors and juices from the vegetables to meld into the sauce.
