Main Ingredients

  • 5 large eggs
  • A small bunch of green onions (mostly the white parts)
  • 2 Korean green chili peppers (Cheongyang peppers)
  • 1/4 medium onion

Marinade

  • 2 soju cups soy sauce (approx. 200ml)
  • 3 soju cups water (approx. 300ml)
  • 3 tablespoons raw sugar (or granulated sugar)
  • 1 tablespoon corn syrup (or rice syrup/oligosaccharide)

Cooking Instructions

First, fill a pot with plenty of water and add 1 tablespoon of salt and 1 tablespoon of vinegar. This helps make the eggshells easier to peel. Once the water starts boiling, carefully add the eggs. Boil them for about 8 minutes for soft-boiled or 10 minutes for hard-boiled, depending on your preference.

Immediately transfer the boiled eggs to cold water to cool them down. This makes peeling much easier. Once cooled, carefully peel the eggs.

Now, let’s make the marinade! In a bowl, combine 2 soju cups of soy sauce, 3 soju cups of water, 3 tablespoons of raw sugar, and 1 tablespoon of corn syrup. Stir thoroughly until the sugar is completely dissolved. You can adjust the amount of soy sauce or sugar to suit your taste for the perfect sweet and savory balance.

Once the marinade is ready, finely chop the onion, green onions, and Korean green chili peppers, and add them to the mixture. Adding chopped vegetables will enhance the flavor and texture of the marinated eggs, making them even more delicious.
