Having soy-marinated eggs on hand is a lifesaver for those busy days when cooking feels like too much effort. Simply scoop some rice into a bowl, top it with these delicious eggs, and you have a satisfying meal with no need for other side dishes. They are incredibly tasty on their own and surprisingly simple to make. Give this Mayak Gyeran-jang recipe a try!
Main Ingredients- 20 large eggs
- 2.5 cups soy sauce (using a paper cup as a measure)
- 1.5 cups sugar (using a paper cup as a measure)
- 2.5 cups water (using a paper cup as a measure)
- 1 onion
- 1 stalk of green onion
- 1 Tbsp minced garlic
Cooking Instructions
Step 1
First, prepare the soy marinade for the eggs. Using a paper cup as your measuring tool, measure out 1.5 cups of soy sauce and 1.5 cups of sugar.
Step 2
Add 1.5 cups of water and 1 Tbsp of minced garlic to the mixture. Stir well until the sugar is completely dissolved, creating a flavorful soy base.
Step 3
Finely chop 1 stalk of green onion. Dice 1 onion into bite-sized pieces, about 1.5cm cubes. Larger onion pieces will add a nice crunch.
Step 4
Add the chopped green onion and diced onion to the prepared soy sauce mixture. If you enjoy a more prominent onion texture, feel free to increase the amount of onion. For a spicy kick, you can also add a few chopped Korean green chilies (cheongyang peppers) to your preference.
Step 5
Now it’s time to boil the eggs. Fill a pot with plenty of water and bring it to a rolling boil. Gently add the eggs and cook for approximately 6 minutes. This duration will result in perfectly soft-boiled eggs with a runny yolk.
Step 6
After boiling, immediately rinse the eggs under cold water to cool them down. Carefully peel the shells. Removing the shells cleanly will make the final dish look more appealing. A helpful tip: peeling the eggs after chilling them in cold water can make the process much easier.
Step 7
Place the peeled boiled eggs into the prepared soy marinade. Let them sit at room temperature for about 1 hour to allow the flavors to soak in. After 1 hour, they are ready to be enjoyed! For best results and preservation, store the marinated eggs in the refrigerator. They are absolutely delicious served over a bowl of warm rice!
